Fish Dum Biryani


Biryani is all time favorite dish for all age groups. This is something different. Because we usually do variety of biryani's like chicken, mutton, egg and Veg. This is Fish Biryani which taste more yummy than others. It is very simple biryani once you know the correct procedure. To make this more simple I have given you step by step procedure for this fish Biryani. Try this in your home, definitely you will get more credits from your family..

Ingredients
For Cooking Rice:
  • Basmati Rice - 2 cups
  • Water- 4 cups
  • Cloves- 4
  • Cardamom - 2
  • Cinnamon - 2
  • Bay leaf - 2
  • Salt - As needed
  • lemon juice - 1 tsp (optional)
For Marinate:
  • Fish Pieces - 5 -6 (use Fish having less bone)
  • Red Chili Powder - 1 & 1/2 tsp
  • Coriander Powder - 1 tsp
  • Cumin Powder - 1/2 tsp
  • Turmeric Powder - 1/4 tsp
  • Salt - As needed
  • Garlic Paste - 1 tsp
  • Oil - 1/2 cup
For Biryani :
  • Chopped Onion - 1 Cup
  • Chopped Tomato - 1/2 Cup
  • Ginger Garlic Paste - 2 tsp
  • Curd - 1 & 1/2 tsp
  • Red Chili Powder - 1 & 1/2  tsp
  • Coriander Powder - 2 tsp
  • Special Masala - 1 tsp
  • Fennel Seeds - 1 & 1/2 tsp
  • Coriander leaves - 1/2 handful
  • Mint Leaves - 1/4  handful
  • Bay leaf - 1
  • Salt - as needed
Method:
Step 1:
  • Wash and Soak rice for 30 mins.
  • Heat a Kadai, Add all the ingredients for cooking rice, Add water, Allow it to boil.
  • Add the soaked rice in the water and cook it for 8 to 10 mins. 
  • Once it almost cooked, Drain it in a colander and set aside.
Step 2:
  • Take fish pieces, wash them well under running water.
  •  In a mixing bowl, Mix all the ingredients for marination and add very little water and make it into a thick paste.
  • Then add the fish to it and mix well. Make sure each piece is coated well with the masalas. Marinate for 20- 30 minutes.
  • Heat oil in a heavy bottom pan, Place the fish pieces carefully and cook them for 5 minutes on each sides. Transfer it to a plate.
Step 3:
  • In the same pan, Add Bay leaf , fennel seeds in the excess oil, saute till they turn aromatic.
  • Add onions and fry till they turn golden.
  • Add ginger garlic paste and fry until raw smell goes off. 
  • Add tomato and mash up
  • Add mint leaves, coriander leaves  into it, fry until raw smell goes off.
  • Add Red Chili Powder, Coriander Powder, Special Masala Powder, Curd , salt one by one, Mix well. Cook this for 5 mins till the masala is completely cooked. 
  • Now spread a layer of cooked rice on top and add some more coriander and mint leaves, and place the fish pieces on top of the rice.
  • Again on the top of fish pieces, spread the remaining cooked rice.
  • Close the pan with a lid, place over a heavy bottom iron tawa and put the tawa on low heat. Let this whole thing be on dum for 15 to 20 mins. Open the lid and mix gently. 
  • Now Fish Biryani Is ready, Serve Hot....
Notes 
  • The most important thing is you are adding the salt in three stages. So be careful in the amount of salt you are adding.
  • You can make a paste of mint leaves, coriander leaves,  fennel seeds  in a mixer,  if you use it as grind-ed paste, it will smells excellent.
  • For Special Masala- Heat a Pan without oil,  Add Cinnamon Stick 1, Cardamom 5 pieces, cloves 5 pieces,Dry roast it until the colour slightly changes, Allow it cool, Grind it as a powder in a Mixer. The Special Masala gives you excellent Flavor and Taste.
  • Make sure to fry both the sides until fish turns soft, little red, No need to wait until crisp.
  • Selecting and Purchasing fresh Fish is very important.
