Tasty Chicken Biryani

Ingredients
For Marinate:

To Grind:

  • Fennel Seeds - 1 & 1/2 tsp
  • Coriander leaves - 1 handful
  • Mint Leaves - 1 handful
  • Green Chilies - 2 
To Temper:
  • Bay leaf - 1
  • Cloves - 3 
  • Cinnamon stick - 1
Method
Step 1:
  • Wash the chicken pieces, and cut to medium sized pieces
  • Add Turmeric Powder in the chicken and mix well. Keep aside to marinate for 15 minutes.
  • For Special Masala- Heat a Pan without oil,  Add Cinnamon Stick 1, Cardamom 5 pieces, cloves 5 pieces,Dry roast it until the colour slightly changes, Allow it cool, Grind it as a powder in a Mixer, Keep aside.
Step 2:
  • Wash and soak rice for 30 Minutes and drain water, Keep aside.
  • Take a Mixer add mint leaves, coriander leaves, green chilies, fennel seeds, grind it and keep aside.
Step 3:
  • Take a pressure cooker, add oil, ghee, allow to heat
  • Add cinnamon stick, bay leaf, cloves saute till they turn aromatic.
  • Add onions and fry till they turn golden.
  • Add ginger garlic paste and fry until raw smell goes off. Add Marinated Chicken in it, Mix well until the water in the chicken goes out.
  • Add tomato and mash up, Add grind-ed mint leaves, coriander leaves, green chilies, fennel seeds into it, fry until raw smell goes off.
  • Add Red Chili Powder, Coriander Powder, Special Masala Powder, Curd one by one, Mix well 
  • Now add 4 cups of water,  Add Salt, Pressure cook for 2-3 Whistles. This is to cook the chicken.
  • once the pressure releases from the cooker,Open it and Add the rice in it, Close the cooker, Pressure cook for 2 Whistles. Let the pressure releases and Gently fluff.
Notes
  • You can use mint leaves, coriander leaves, green chilies, fennel seeds directly without grinding, But if you use it as grind-ed paste, it will smells excellent
  • You can use normal boiled rice which is usually used for meals instead of Basmati rice. For using 1 cup boiled rice add 2 cups of water, allow extra whistles.
  • You can also use Biryani Masala instead of using Red Chili Powder, Coriander Powder.
  • The Special Masala gives you excellent Flavor and Taste.
