Ambur Special Mutton Biryani

Ambur Mutton Biryani is very famous in Tamil Nadu. Usually Biryani is all time favourite for all age groups, Especially mutton biryani is very tasty and yummy dish.

Ingredients
  • Chopped Onion - 1 Cup
  • Chopped Tomato - 1/2 Cup
  • Ginger Garlic Paste - 2 tsp
  • Basmati Rice  - 2 cups
  • Ghee -2 tsp
  • Oil - 3 tsp
  • Curd - 1 & 1/2 tsp
  • Red Chili Powder - 1 & 1/2  tsp
  • Coriander Powder - 2 tsp
  • Special Masala - 1 tsp
  • Salt - as needed
  • Mutton - 1/2 Kg
  • Turmeric Powder - 1 tsp
To Grind:
  • Fennel Seeds - 1 & 1/2 tsp
  • Coriander leaves - 1 handful
  • Mint Leaves - 1 handful
  • Green Chilies - 2 
To Temper:
  • Bay leaf - 1
  • Cloves - 3 
  • Cinnamon stick - 1
Method
Step 1:
  • Wash and soak rice for 30 Minutes and drain water, Keep aside.
  • Wash the mutton pieces, drain water, keep aside.
  • Take a Mixer add mint leaves, coriander leaves, green chilies, fennel seeds, grind it and keep aside.
Step 2:
  • Heat oil in cooker, Add Bay leaf, Cloves, Cinnamon stick one by one, Allow it to splutter.
  • Add chopped onion, Fry until it turns golden, Add ginger garlic paste, fry until the raw smell Goes off.
  • Add chopped tomatoes, Mash well. Add mutton pieces, turmeric powder, Mix well, until the excess water inside the mutton evaporates.
  • Now add Add grind-ed mint leaves, coriander leaves, green chilies, fennel seeds into it, fry until raw smell goes off.
Step 3:
  • Add Red Chili Powder, Coriander Powder, Special Masala Powder, Curd one by one, Mix well.
  • Now add 5 cups of water,  Add Salt, Pressure cook for 4-5 Whistles. This is to cook the Mutton.
  • once the pressure releases from the cooker,Open it and Add the rice in it, Close the cooker, Pressure cook for 2 Whistles. Let the pressure releases, Add Ghee and Gently fluff.
  • Serve hot with Curd Onion
Notes
  • You can do it by seeraga samba rice or ordinary rice also. The water ratio is 1:2. Add extra 1 Cup of water for cooking mutton.
  • For Dum Biryani - Once the rice absorbs all water, place an iron tawa or Dosa tawa on the stove, then place pressure pan above that, Close the lid, place whistles and cook for 20 mins, As the heat comes from the iron tawa , and transfers to pressure pan, you will not get any whistles. the Dum is maintained.
  • You can also use Biryani Masala instead of using Red Chili Powder, Coriander Powder
  • You can use mint leaves, coriander leaves, green chilies, fennel seeds directly without grinding, But if you use it as grind-ed paste, it will smells excellent
  • For Special Masala- Heat a Pan without oil,  Add Cinnamon Stick 1, Cardamom 5 pieces, cloves 5 pieces,Dry roast it until the colour slightly changes, Allow it cool, Grind it as a powder in a Mixer, Keep aside.
