Tender Coconut Payasam / Elaneer Payasam

We usually do payasams like milk payasam, paruppu payasam, semiya payasam. This recipe is somewhat different but more healthy. Tender coconut has many health benefits . Coconut water has the ability to rehydrate you very quickly because it is readily absorbed into the body. Coconut water can even handle mild infections. It contains lauric acid. A cup of coconut water not only has more than 600 mg of potassium, which is one and a half times of what you get from a banana, but has over 250 mg sodium, about 60 mg magnesium, 58 mg calcium and 48 mg phosphorus. 

Ingredients
  • Tender Coconut Water - 1 Cup
  • Tender Coconut Pulp - 3/4 Cup
  • Milk - 2 Cups
  • Cardamom Powder - 1 tsp
  • Sugar - 300 gms
  • Cashews - 6
  • Ghee - 1 tsp
Method:
  • Add milk, sugar in a pan and put the flame to medium or low and let it thicken for 5 - 8 minutes. Allow it to cool.
  • Take a mixer, Grind tender coconut pulp, water coarsely or smoothly. ( depending on your texture preference).
  • Fry cashews in ghee, Keep aside.
  • Now Add grinded ingredients to the cooled milk.
  • Add cashew nuts, cardamom powder and mix well. Serve chilled.
Notes
  • You can use sweetened condensed milk instead of using sugar.
  • Adjust milk, coconut water according to the pulp’s texture.
  • Milk should be completely cooled down before adding coconut mixture..
  • Consume within the same day as you prepare.
  • Chill before serving.
