Gooseberry Rice / Amla Rice/ Nellikai Sadam

Gooseberry is very rich in vitamin C and contains many minerals and vitamins like calcium, phosphorus, iron, carotene, and vitamin B complex. It enhances food absorption, balancing stomach acids, fortifying the liver, and nourishing the brain and mental functioning. It also strengthens the lungs, enhances fertility, helps the urinary system, improves skin quality, and promotes healthier hair. It is also a powerful antioxidant agent. Gooseberry rice is very simple. you can do it with leftover rice in your home. But is is very healthy.

Ingredients
  • Cooked rice – 2 cups
  • Nellikai/ amla – 4
  • Salt – As needed
To Temper:
  • Oil – 1 tbsp + 1 tsp
  • Mustard Seeds – 3/4 tsp
  • Chana Dal – 2 tsp
  • Curry leaves – 1 sprig
  • Red Chillies – 2
  • Peanuts – 2 tbsp
  • Turmeric powder – 1/4 tsp
  • Asafoetida – A pinch
Method:
Step 1:
  • Pressure cook rice with little salt and cool down in a bowl separately.
  • Grate Amla in a fine grater. Discard the seeds, Keep aside.
  •  Heat oil in a kadai, Add mustard seeds, when it splutters, Add curry leaves, chana dal, red chili, peanuts, asafoetida, one by one. Fry till dals turn golden brown.
  • Add turmeric powder, grated amla, salt,  Mix well,  fry for a minute in medium flame.
  • Once the gooseberry is cooked, add the cooked rice and mix gently. Switch off the flame.Check for salt.
  • Serve with papads, Potato fry.
Notes
  • Adjust red chilli as per the spice level u require and the chilli’s nature.
  • Make sure peanut is fried in low flame to ensure even cooking and gets crisp.
  • You can add fried  cashew nuts if preferred.
