Crispy and Tasty Flattened Rice Vada / Aval Vadai Recipe

Flattened rice can be eaten raw by immersing it in plain water or milk, with salt and sugar to taste, Many makes upma out of it and for a change i tried to make vadai. It is an easy to make recipe and it takes only less time. it can be consumed by those allergic to wheat products. You get iron, vitamin B, carbohydrates and proteins.
- Flattened rice/ Aval - 1 Cup
- Chopped Onion - 1/2 Cup
- Chopped ginger - 1 tsp
- Green chili - 1 tsp (Chopped)
- Asafoetida - A pinch
- Cumin Seeds - 1 tsp
- Rice Flour - 3 tsp
- Curry leaves - 3 spring
- Coriander leaves - 1 tsp (chopped)
- Grated Coconut - 2 tsp (optional)
- Salt - As needed
- Oil - For Deep Frying
Method:
Step 1:
- Wash the flattened rice thoroughly, and add water just above the level of flattened rice and set it aside for 10 minutes.
- Squeeze out excess water from soaked flattened rice. Mash the flattened rice nicely.
- Add chopped onion, green chili, ginger, salt, Asafoetida, Cumin Seeds, Rice Flour, Grated coconut, teared up curry leaves, coriander leaves and mix everything well.
- Make small balls out of the vada mixture and then flatten it to make a vada.
Step 2:
- Heat oil in a Kadai, When the oil is really hot, keep the flame medium and add 4-5 patties and deep fry them till they are golden brown and crispy.
- Take out the crispy vada and place it in tissue to drain excess oil
- Serve the delicious Aval Vadai / Flattened Rice Vada with hot tea / coffee.
Notes
- Adding rice flour helps in binding all the ingredients in the vada.
- While making vada, if the mixture is too thick, dip fingers into a bowl of water and try to shape.
- If you feel the mixture is watery you can adjust it with adding some gram flour or rice flour.
- Keep the flame in medium otherwise Vada will burn.
