Easy & Yummy Carrot Halwa

Carrots are having very impressive benefits like reduced cholesterol, lower risk of heart attacks, prevention of certain cancers, improved vision, and reduced signs of premature aging.Carrots are considered a vegetable, and used in all kinds of vegetable gravies, curries and desserts.This recipe to make this simple Carrot Halwa is my friend’s favorite and is one of the best I have had.
Ingredients
- Medium size carrots - 1/2 kg
- Milk - 3 Cups
- Sugar - 1/4 Kg
- Ghee - 1/4 Cup
- Cashews - 10
- Cardamom Powder - 1 tsp
Step 1:
- Wash the carrot and peel them, Grate the carrot to medium thickness with a hand held grater.
- Heat Ghee in a Kadai, add the grated carrot in it, Mix well.
- Add Milk in it, Allow it to boil in a low to medium flame.
- Keep stirring the mixture until the milk is absorbed by carrot, It will take 15 - 20 minutes, Keep it in low flame.
- Now add Sugar, Cardamom powder in it, Keep stirring continuously from time to time to prevent scorching.
- Keep the flame in low until it comes to halwa consistency and the ghee leaves on the top.
- Meanwhile roast the cashews with 1 tsp of ghee in a pan.
- Switch off and Now Garnish the carrot Halwa with roasted cashews. Serve.
Notes
- You can adjust milk and sugar up to your taste.
- It can be refrigerated for 24 hrs.
- Instead of using the grated carrot, you can also grind the grated carrot with a blender, But for this, You should not add water for grinding.
