Kerala Special Wheat Payasam/ Gothumai Payasam

Wheat Payasam is a special dish in Kerala. Most of the peoples in Kerala makes this sweet during Onam festival. The dishes which they prepare will have some unique taste and It would be more healthy. Usually we use to make regular dishes like Chapati, Poori, Dosa with Wheat. But this is a different dish. Surely you are all going to love it.


Ingredients
  • Broken Wheat – 1/2 cup
  • Jaggery – 1/2 cup
  • Milk – 1/2 cup
  • Grated Coconut - 3-4 tsp
  • Cardamom powder – 1/4 tsp
  • Cashews – 4 
  • Ghee- 2 tsp
  • Salt -  A Pinch
Method:
Step 1:
  • Take a pressure cooker heat ghee and add broken wheat and roast for 3-5 mins.
  • Add 2 cups of water and pressure cook for 4-5 whistles.Once Pressure releases, Open it and Fluff it.
  • Boil jaggery water on medium heat, when it starts thickening, Add cooked Broken Wheat in it,Mix well
Step 2:
  • Now add Grated coconut, Salt, Cardamom powder in it, Cook well and mash it.
  • Keep the flame in low and add milk.Keep stirring.Let it cook for another 8-10 mins. Keep aside.
  • Heat a pan with ghee, Fry cashews till golden and add cashews to the payasam and mix well.
  • Serve Hot or chill.
Notes
  • You can adjust the consistency of the payasam by adding more or less milk according to your personal preferences.
  • Use Cooled Milk. When both the jaggery mixture and the milk are hot, there are chances of the milk curdling, so make sure that milk is at room temperature.
  • You can also use whole wheat instead of broken wheat. For using whole wheat - You have to grind the wheat coarsely  after pressure cooking the wheat.
