Kerala Famous Aviyal Recipe

                 Aviyal is an extraordinary dish for all age groups. But it is something special for kids. The reason is, It consists of mixed veggies. Each Vegetable is rich in unique vitamins, Calcium's. Generally Kids will be fond of eating Potatoes, Cauliflower or some spicy vegetables. They wont eat other vegetables. Mom usually tries hard to make their kids healthy. Instead of cooking separate dishes with different Veggies. You can try this one Recipe which consists of Different veggies. This will really helpful to make your kids more healthy. 

Ingredients
  • Mixed Veggies - 2 Cups
  • Coconut Oil - 1 tsp
  • Curry Leaves - 1 Sprig
  • Mustard Seeds - 1 tsp
  • Salt - As needed
  • Curd/ Yogurt - 3 tsp
To Grind
  • Chopped Coconut - 1/4 cup
  • Green Chilly - 2 to 3
  • Cumin Seeds - 3/4 tsp
  • Small Onion - 3 to 4 pieces
Method:
Step 1:
  • I used the veggies drumstick ,cluster beans  ,beans, carrot, potato, Elephant Yam and plantain.Cut them into long strips kind of pieces
  • Take a wide Pan, Add the mixed veggies in it, Add little water, Salt, Close with a lid, Allow it cook till the veggies become soft, and ensure they should not be mashed.
  • Meanwhile Take a Mixer, Add Coconut, Green Chilies, Small Onion, Cumin Seeds, Grind it little coarsely.
Step 2:
  • Add the Grind-ed Paste in the Cooked Veggies, Bring it to boil. 
  • Heat oil in a pan, Add Mustard Seeds, Curry leaves, Allow it to Sizzle, Switch off the flame and Pour it in the cooked Veggies. Mix Well.
  • Allow it to cool for sometime, Now add the yogurt in it, Mix well. Ensure that Yogurt should not be added when Aviyal is hot.
Notes
  • You can also Add Raw Coconut Oil for extra flavor.
  • If you do no like adding yogurt just skip adding that.
Quantity of Veggies:
  • Drumstick - 1
  • Cluster beans - 5 to 6
  • Beans - 4 to 5
  • Carrot - 1 to 2
  • Potato - 1 to 2
  • Elephant Yam - 150 gms
  • Plantain - 1
