Chettinad Sweet Kuzhi Paniyaram

Ingredients
- Parboiled Rice/Idly Rice - 1 cup
- Raw Rice - 1 cup
- Urad Dal -1/4 Cup
- Fenugreek seeds - 1 tsp
- Cardamom Powder - 1 & 1/2 tsp
- Grated Jaggery - 1/2 Cup (adjust to ur taste)
- Salt - As needed
- Water - As needed.
- Oil - As needed.
Method
Step 1:
- Wash and soak the rice, urad dal, fenugreek seeds all together in a bowl for about 4 hours.
- Drain and take it in a grinder, Grind it to a smooth paste by adding little water. Mix salt.
- Pour it in a large container, Cover and leave to ferment overnight.Now the batter is ready to make paniyarams.
- Heat a pan, Dissolve jaggery in very less water and filter it to remove any impurities. Allow it to cool
- Take the Batter in a bowl, Add dissolved jaggery, Cardamom Powder in it and Mix well in a Dosa Batter consistency.
- Heat the Paniyaram Pan/ Plett Pan , Grease it with few drops of oil in all moulds.
- Pour batter in it , let it cook . When they are fried to golden, gently flip each paniyaram to the other side. so that it will cook on the other side
- You can cover with a lid to ensure faster cooking.
Notes
- You can use Wooden stick or fork to Flip paniyaram to other side.
- You can use Ghee along with Oil for Greasing the pan.
- Serve Hot with Coconut Chutney.
