Madurai Special Mutton Meat Balls/ Mutton Kola Urundai

It is a different dish which is rich in taste. Mutton kola urundai / mutton meat ball is so famous in Madurai hotels/Mess. Delicious and crispy mutton kola urundai which can be served as a appetizer for any parties. These balls turn out crispy and juicy as well. Generally Mutton / Lamb is called Protein powerhouse. It has high protein content. One of the amazing benefits of goat meat is it is able to lower the risk of inflammation especially in blood vessel. It is due to CLA contained in Lamb.
Ingredients
- Minced mutton/Kothu kari - 300 gm
- Small Onion - 100 gm
- Grated Coconut - 1/2 Cup
- Fennel Seeds - 2 tsp
- Roasted gram dal - 3 tsp
- Red chili powder - 2 tsp
- Turmeric Powder -1/2 tsp
- Ginger Garlic paste - 1 tsp
- Cumin Seeds - 1 tsp
- Salt - As needed
- Curry Leaves - 2 Springs
- Coriander leaves - 1/2 handful.
- Oil - To deep fry
Method
Step 1:
- Take minced meat in a washing bowl. Pour water gently and wash once. Again pour water, add turmeric powder and mix well in the water very gently.
- Take handful of minced meat, squeeze well to extract all water in it. Repeat for the rest.
- Heat a pan, Add the squeezed mutton in it, heat in medium-high flame. First it will let out some water. Just keep sauteing. In 8-10 mins, it will become completely dry . Switch off and transfer to a plate to cool down.
- Once cooled, add fried minced meat in the mixie jar, in batches. Grind well, Keep aside.
Step 2:
- Add Small onion, grated coconut, fennel seeds, roasted gram dal, Cumin seeds in a mixer, grind well without adding water.
- Add grinded minced mutton, grinded ingredients, salt, ginger garlic paste, red chili powder, curry leaves, chopped coriander leaves to a mixing bowl and combine well.
- shape into small balls, Once oil is hot, Deep Fry the balls, turn the balls to evenly cook in all sides. Keep in a low flame.
- Serve hot.
Notes
- Be gentle in washing minced meat, else more meat will be washed away with water.
- Get fat less minced meat as fat will tend to leave oil and make balls disintegrate while frying.
- Don't add water while grinding and making balls.
- Do not add oil while sauteing minced meat.
